Bolognese
2 tablespoons Olive Oil
2 tablespoons Vegan Butter
1 Yellow Onion - Diced
1 stalk Bunch of Celery - Chopped
1 Carrots - Chopped
1 tablespoon Garlic - Minced
2 sausages Italian Sausages - Vegan My preferred choice is the Tofurky brand
6 oz Crumbles My preferred choice is Lightlife, Smart Ground- Original
2 tablespoons Tomato Paste
1/2 cup White Wine
1 cup Hot Water
1 teaspoon Salt
3/4 teaspoon Black Pepper - Ground
Pasta
1 lb Linguine My preferred choice is Rummo brand. Use a good quality wheat pasta.
2 teaspoons Salt
1 tablespoon Olive Oil

This vegan spaghetti bolognese recipe is fantastic. But it doesn’t mean Nonna will like it. That being said, your best friends will talk about it for years to come. Like your first kiss!

Bolognese

Cut the sausage into thirds and place into a food processor with a blunt blade. Mix/process until the sausage is torn apart into the desired general size. Do not over process as the sausage will cook down. Add the crumbles and process for 30 seconds.

Place a medium saucepan on a medium heat. Add 2 tablespoons of olive oil and butter. Once the oil and butter is heated, add the diced onions, and stir. Fry for 5 minutes, stirring often to avoid burning the onions.

Add the diced celery and carrot. Cook for 3 minutes. Until softening.

Stir in the garlic and cook for 1 minute.

Add the sausage and crumble mixture. Cook for 2 minutes. Stirring.

Mix in the tomato paste and wine. Add 1 cup of water. Cook for 5 minutes.

Add the salt and pepper. Cover the saucepan and turn the heat to low. Cook for 45 minutes. This is the process of cooking the wine off. The wine can overpower the sauce if you shorten the cooking time. Stir occasionally. At the end of the sauce cooking time, bring a large saucepan of water to a boil. Add the remaining salt and olive oil.

Pasta

Add the linguine to the saucepan of boiling water. Cook for 10 minutes until al dente.

Remove from the heat, and drain immediately. Shake off any excess liquid. Place the linguine back into the hot saucepan. Add the Bolognese sauce. Stir well and serve warm.
