Scones, as in sc-own-s, or scones as in sc-on-es; that’s the question. Traditional British fare, that’s traveled the world over. Everyone in Britain has a scone recipe. But not everyone has a great vegan scone recipe. Savory or sweet. Currants or sultanas. The underlying greatness of the sc-own for me, is a slightly sweet and moist, but light and airy texture. Fresh out of the oven it’s hard to watch them cool without seeing them disappear right in front of your eyes. This vegan scones recipe will leave the ladies and gents wanting more.

Growing up, I remember my nan, taking her scones out of the oven. We kids would gather at the smell of the scones baking. Waiting for an opportunity to be first. I had no idea then, just how much joy she had from seeing the hands that reached in to grab them – before she gave the all clear. I do now. I share her same joy, for family and food. Bon appetit! Heat the oven on bake to 400 F/200 C.

In a large mixing bowl, add the flour, sugar, baking powder and salt. Whisk together. Add the banana. Squeeze the banana through your hand, into the mix. Continue to break the banana down into the flour mix. Rub the butter into the mixture. Add the milk. Mix by hand, until the flour mixture, becomes a dough. Gently roll and knead, until the dough stays together. Do not keep kneading past this point. Place in the refrigerator for 10 minutes.

Lightly flour a sheet of parchment paper on a flat surface. Place the dough onto the floured surface. Roll out the dough until it is ¾ inch thick, round, square or rectangle.

Score/cut the dough to the desired shape with a 2 ½ inch biscuit cutter, or pizza cutter.

Slide the parchment paper onto a baking sheet or overturned baking tray. Place into the oven.

Bake for 20 to 30 minutes. The scones should be moist, not undercooked and doughy.

Remove from the oven and place on a cooling rack for 10 minutes. If they’re still on the rack when you come back, spread a little butter and strawberry jam on top, and serve warm.
