How much further do you need to look for some great vegan rice dishes? If you love Indian food or want to start trying the cuisine, you need a vegan Indian restaurant rice recipe. It’s a wonderful and yet simple vegan rice dish. Indian and Pakistani cuisine typically uses a type of rice called basmati rice. Basmati rice is my favorite, go-to rice for most rice dishes. Here, we prepare a vegan rice dish from Indian basmati rice. Being a simple lad of a simple mind, when I first started eating Indian food (many years ago) I often wondered where did the bright orange rice come from. If you’re a closet simpleton like me, stay with me. I’ll shed some light on the subject.

Wash 2 cups of basmati rice in water. In a medium sized saucepan with a tight-fitting lid, add 3 ¼ Cups water, ½ teaspoon salt and 1 teaspoon olive oil. Bring the water to a boil. Drain the soaking rice and then add rice to the boiling water. Place a lid on the saucepan. Bring back to a boil.

As soon as the water boils, turn the heat down to just above low. Leave with the lid closed for 12 minutes. At 12 minutes, turn the heat off. Allow the rice to continue to cook under its own heat for 5 minutes. Remove the lid and let the rice stand for 10 minutes.

Add drops of yellow food coloring to the top of the rice. Let the rice sit for 10 minutes.

With a serving fork, start to fluff up the rice. The goal is to break up clumps of rice. If the rice is cool enough the food coloring will stay primarily within the rice that initially absorbed the coloring. Do not stir the rice. Serve and enjoy.
