I know what you’re thinking. He’s lost his mind! A vegan Reuben sandwich recipe! I get comments all the time about the way it looks and then on the way it tastes. If you liked a Reuben sandwich made from corned beef in your past life, this is going to bring you pure joy. A long-lost friend, that you thought was lost forever is back, and better than ever! If you’ve never had a Reuben sandwich, it’s hard to put into words what you’re missing. A New York Deli Style, Reuben Sandwich is the greatest of all American sandwiches. There is no close second for me. It’s just that good! Starting out on a rye bread with flavors of caraway bringing the bread to life, this vegan Reuben sandwich recipe begs attention. The Seitan driven corned beef, has all the flavors and texture of corned beef without the negatives. Looks like, smells like, feels like and tastes like the real thing.

How u do-in? The corned beef style seitan is straight from The New Chicago Diner Cookbook. If you’re ever in Chicago, head over to the Chicago Diner location on Milwaukee Avenue for a fantastic experience. Nuff-said. There are so many things right about this sandwich and the Chicago Diner that it all screams, “stop thinking you have to sacrifice your taste buds to be vegan”! Place the required amount of Seitan to achieve a stacked ½ to ¾ inch layer of Seitan per sandwich in a suitably sized saucepan. Add enough of the marinade liquid to allow the Seitan to soak and steam in the juice as it cooks for 5 minutes. Keep the lid on the pan. Heat on a medium heat for 10 minutes. Half way through heating, stir up the seitan.

Pour the sauerkraut into a small saucepan and warm on a medium heat for 10 minutes.

Gently warm 2 slices of rye bread. Preferably in a moist heat. Do not toast or dry out the bread.
*I make my own rye bread, and I'll share the recipe soon. That said, rye bread takes about a week to make. It's no easy task, but worth all the effort. So, if you have a local baker you may want to check them out if bread making isn't your quest.

When the components are ready, place a healthy amount (½ to ¾ inch) of corn beef styled seitan on a slice of rye bread. Add a layer of hot sauerkraut. Spoon on to the sandwich a layer of cheese sauce. Spoon on to the sandwich a layer of thousand island dressing. Top off with a slice of rye bread.

You probably want to cut the sandwich across the middle. Bring plenty of napkins, serve warm and enjoy the compliments.
