8 oz Soba Noodles made with buckwheat - gluten free
8 oz Lo Mein Noodles Substitute with soba noodles for a gluten free option
2 tablespoons Sesame Oil
2 Carrots - Chopped cut into thin strips
1 Red Pepper cut into thin strips
1 lb Shitake Mushrooms Remove stem
1/2 cup Peas
5 to 8 oz Spinach
2 tablespoons Garlic - Minced
1 1/2 teaspoons Fresh Ginger - Minced
Sauce
3 tablespoons Soy Sauce Substitute with a gluten free version if needed
2 teaspoons Sugar
2 teaspoons Sesame Oil
1 tablespoon Chili Paste

In a large saucepan, bring 3 quarts of water to a boil. Add the wide noodles and boil for 1 minute.

Add the soba noodles to the wide noodles. Once the water returns to a boil continue to cook for 3 minutes. Stir occasionally.

Remove the noodles to a colander. Run the noodles under cold water to prevent the noodles from continuing to cook. Set aside.

While preparing the noodles, on a medium heat, add the sesame oil to a sautéing pan/wok. Add the garlic and ginger. Fry for 30 seconds. Stir occasionally.

Add the carrots and cook for 4 minutes. Stir occasionally. Keep a lid on as much as possible during the cooking process.

Add the peppers and the mushrooms and cook for 4 minutes. Stir occasionally.

Add the peas and cook for 2 minutes. Stir occasionally.

Add the spinach to the pan and stir until wilted. Approximately 3 minutes. Stir frequently to engulf the spinach.

Place the soy sauce, sugar, sesame oil and chili paste into a small mixing bowl. Whisk.

Pour the noodles and the sauce into the sautéing pan, and mix the contents thoroughly. Allow the noodles to heat through and serve.
