2 cups - uncooked Basmati Rice Basmati rice is my favorite type of rice
3 1/4 cups Water - Room Temperature
1/2 teaspoon Salt
1 teaspoon Olive Oil
1 cup Carrots - Chopped
1 cup Peas
1 cup Brussel Sprouts
2 tablespoons Peanut Oil
1 tablespoon Sesame Oil
1 tablespoon Soy Sauce Use a gluten free brand if needed

Vegan fried rice should be a star on its own. Light, clean and flavorful. To add a depth of flavor I use Brussel sprouts. There is a wonderful freshness that you taste when making this dish at home.

It’s best to make fried rice with rice that has cooked and fully cooled such as left over rice. Or you can make rice a few hours or a day in advance.

Soak 2 cups of basmati rice in water. In a medium sized saucepan with a tight-fitting lid, add 3 ¼ cups water, ½ teaspoon salt and 1 teaspoon olive oil. Bring the water to a boil. Drain the soaking rice and then add rice to the boiling water. Place a lid on the saucepan. Bring back to a boil. As soon as the water boils, turn the heat down to just above low. Leave with the lid closed for 12 minutes. At 12 minutes, turn the heat off. Allow the rice to continue to cook under its own heat for 5 minutes.

Check on the rice. With a serving fork, start to fluff up the rice. The goal is to break up clumps of rice. Allow the rice to cool without the lid. As the rice cools, continue to fluff the rice every 20 minutes for the first hour.

Peel and dice the carrots. Place the diced carrots into a small saucepan of boiling water and a pinch of salt for 5 minutes. Drain and set aside.

Remove the hard end of the Brussel sprouts. Slice the Brussel sprouts into thin strips. Over a high heat place a wok or large frying/sautéing pan (pan). Once the pan is hot, add 2 tablespoons of peanut oil. Move the oil around, coating the surface of the pan. Add the carrots. Continually stirring, fry the carrots for 2 minutes. Add the Brussel sprouts. Continue to stir for 1 minute. It’s okay if the Brussel sprouts take on brown spots. Add the peas. Continue to stir for 2 minutes.

Turn the heat to medium to medium-low. We are now going to heat the rice, not cook it. Add the rice. Stir the ingredients together. Drizzle over the rice, the sesame oil and soy sauce. Stir the rice well. Continue to stir and heat until the rice is hot. Serve and enjoy.
