1/4 cup Cornmeal - Yellow
1/2 teaspoon Salt
1 teaspoon Sugar
1 teaspoon Active Yeast
2 tablespoons Vegan Butter
1 teaspoon Olive Oil
Pizza Sauce
2 tablespoons Vegan Butter
1/2 cup Yellow Onion - Diced
3 teaspoons Oregano - Dried
1 teaspoon Salt
1 tablespoon Garlic - Minced
28 oz can Crushed Tomatoes
2 teaspoons Sugar
12 large leaves Basil Leaves - Shredded
Pizza Topping
1/4 cup Vegan Chop House Cheese
1 1/2 Vegan Italian Sausage ToFurky brand is my personal choice
5 oz Spinach
1 lb Cremini Mushrooms - Thin Sliced

My harshest, most opinionated friends and non-vegan critics will tell you this pizza is a great pizza… As good as any deep dish. This vegan deep dish pizza recipe has everything you’d expect, want and more. And you thought, a food miracle couldn’t happen to you.

Pizza Dough

Into a large mixing bowl, or stand mixer add the flour, cornmeal, yeast, sugar and salt. Mix together the ingredients. Add the 1 tablespoon of melted butter, 1 teaspoon of oil, and water, continue to mix and knead until a dough is formed. The dough should reach a smooth texture. If mixing in a stand mixer, mix on low for 6 minutes. If mixing by hand, knead for 10 minutes.

Place the dough into a lightly oiled hand. Spray the mixing bowl with oil and place the dough gently into the bowl. Cover the bowl with a shower cap or damp cloth. Leave the dough to rise for 1 hour, or until it doubles in size. Start making the sauce.

Once the dough has risen, move the dough to a very lightly floured surface. Roll the dough into a 15 by 12-inch rectangle. Pour the remaining tablespoon of melted butter onto the dough. Spread the butter over the dough. Leaving a 1 inch unbuttered edge around the dough.

Long ways, roll the dough onto itself to create a log roll. Stretch the roll to 18-inches. Gently flatten the log, with a roller, until it’s roughly 4 inches wide.

Take one end of the dough and fold it over about one third way. Fold the remaining third over the dough. Squeeze the edges together so that the dough begins to take on a ball shape. Lightly re-oil the bowl and place the dough back into the bowl. Cover again. Place the bowl into the refrigerator for 1 hour.

Use a stone 10 inch pie dish for best results. It is the perfect dimension for a deep dish pizza and nothing helps to create the perfect crust more than a stone dish.
Remove the dough from the refrigerator and leave for 5 mins. Roll the dough on a lightly floured surface. To create a circle, roughly 12 inches wide. The dough should be just over ¼ inch thick. You should be able to roll the dough onto itself and lift over the pan. Unroll the dough over the pan. Allow the dough to gently fall into the pan. Help the sides as needed, by coaxing the dough into place. The dough will be a little springy and may retract on itself. Gently push the dough into the bottom edge of the pan. Then push gently the sides into the pan, moving around the pan a couple of times until the dough settles into its place without retracting. Trim the edges if needed and then pinch and smooth off the edge.

Pizza Sauce

Melt the butter in a large saucepan over a medium heat. Add the onion, oregano and salt. Cook for about 10 minutes to soften the onions. Stir often. Add the garlic and stir for 1 minute.

Add the tomatoes, basil, oil and sugar to the saucepan. Stir. Cook the tomatoes for roughly 30 minutes until the right thickness of sauce is determined. No one wants a soupy pizza sauce. No one wants a sauce you can stand a spoon in. Thick, but liquid. Stir, and remove from the heat to rest, uncovered.

Pizza Topping

Place a little oil into a large saucepan over a medium heat, and cook the sliced mushrooms until the water is removed. Stir frequently. Once the water is removed, place the mushrooms in a dish.

Add 5 oz of spinach to the saucepan. Cook uncovered. Stir as it cooks down. The spinach will cook down into almost nothing as the water is removed. Once the water is removed, place the spinach in a dish.

Cut the sausage into quarters. Place the sausage into a food processor with a dull-non-cutting blade. Process for a few seconds at a time. Check often. The goal is to break the sausage apart into large and small pieces, more reminiscent of cooked sausage meat.

Building the Pizza

Trust me, there is method in this. Using a cheese grater with medium holes, grate the Vegan Chop House cheese over the dough. Create a very light covering. This is a strong flavor. Your pizza shouldn’t be cheesy.

Spoon enough sauce into the pan to cover the Vegan Chop House cheese. Spread half the mushrooms, evenly over the pizza dough. Add half the spinach, evenly over the pizza. Spoon more sauce over the pizza.Spread the sausage over the sauce. Add the remaining mushrooms, then sauce, then spinach.

On a low rack, place the pizza into a preheated oven at 400 degrees F, for 25 minutes. The crust will be golden brown.

Remove from the oven, and allow the pizza to cool for 10 minutes and serve.
