15 oz can Beet Juice Take the juice from a can of beets
1 1/2 teaspoons Garlic - Powder
1 1/2 teaspoons Onion - Powder
1 teaspoon Caraway Seeds
1/2 teaspoon Dill Weed - Dried
1/4 teaspoon Fennel Seed
1/4 teaspoon Mustard Powder
1/4 teaspoon Black Pepper - Ground

Slice the seitan as thinly as possible. Think of deli style slicing.

Mix all the ingredients in a Ziploc bag barely big enough to hold the marinade and the seitan.

Add the seitan to the bag. Close the bag and toss the ingredients around to cover.

Place the bag in the refrigerator and toss the bag daily.

Continue to toss the bag for between 5 to 15 days. Removing as much seitan as you need for a recipe during the process.
