So much of food for me is about the memories and experiences that come with every dish. When I had my choice of all things at the table, Chinese Barbecue was a favorite dish. Cut the seitan into strips about ¾ inch thick by 1.5 inches wide. About 4 inches long.

Place the seitan onto a parchment paper lined baking pan. Place the pan into a preheated oven at 400 F/ 204 C for 10 minutes.

After 10 minutes, turn over the seitan to the opposite side and place back into the oven for a further 10 minutes.

Turn the oven onto broil at 500 F/ 260 C. Continue to cook the seitan for 5 minutes and then turn over and cook on the opposite side for 5 minutes.

Remove from the oven. The seitan should develop a very thin skin and be dry to the touch. Allow to cool.

Into a mixing bowl, add the remaining ingredients. Whisk until all ingredients are combined.

Place the cooled seitan into the sauce, and allow to marinate overnight in the refrigerator (8 hrs minimum.

When ready to serve, remove the seitan to a parchment paper lined baking pan, and place into a preheated oven at 400 F/ 204 C for 10 minutes to reheat.

Warm the remaining sauce from the marinade and pour over the warm seitan as required. Serve and enjoy.
