Let’s first agree that vegan cheese isn’t real cheese. Like Cabbage Patch Kids aren’t real kids! I loved real cheese! I was about to start making real cheese at home, right before I turned vegan. I tried all the store bought versions of vegan cheese that I could get my hands on. None of which came anywhere close to real cheese flavors or textures. So, out of necessity I needed to find a vegan cheese recipe I could use. I tried all the “tastes just like real cheese recipes” I could get my hands on. I also tried a number of cashew cheese recipes. I’ll say no more.  Sadly, Cabbage Patch Kids aren’t real folks, and nor is vegan cheese! Let’s call a spade a spade; a vegan cheese recipe won’t create a real cheese taste or texture. But..! And there is one or two coming.

But for the sake of some well-established recipes I had, I needed to figure something out. I’m not gonna lie, you won’t find a good Brie, Double Gloucester, Parmigiana Reggiano, or Stilton on the vegan cheese shelves – yet! I’m still praying for that day! But, what I came up with will work really well if you need a vegan cheese recipe that can add a great cheesy flavor to a dish.

I just can’t go with the flow on claiming the merits of vegan cheese like its cheese cheese. Maybe the marketing geniuses that claim to have a non-dairy cheese with flavors such as mozzarella, gouda, swiss, and cheddar have never tasted real cheese. Maybe, they call their Cabbage Patch Kids by name.

But, not all is dashed. We have been able to come up with a really cheesy flavor that will still make you remember what cheese tastes like. It has the sharpness that you need in cheese. Our vegan cheese recipe is great for cooking. Here’s how we are going to overcome the problem; Put yourself in the right arena first by choosing an off the shelf style (cheddar, mozzarella,..) of vegan cheese you want, and then adjust the nutritional yeast and salt slightly until you find your happy spot. I’m back to enjoying pizza, mac n cheese, nachos n cheese, and everything else I can conjure up that needs a cheese flavor.

Chop up the cheese if in solid form. Place the cheese and other ingredients into a small blender. Blend for 30 seconds. Check the consistency and flavor. Too much nutritional yeast will add a burnt, nutty flavor. Too little salt will leave the flavor being flat. If the flavor is correct, make sure there is just enough water to make a very thick spread.

Blend again for 30 seconds. Scrape the contents into a small airtight container, already lined with cling film.

Four ways to use the cheese sauce:
1. Immediately spoon and spread the Vegan Cheese as you wish,
2. Heat in the microwave briefly and pour onto Nachos…
3. Refrigerate the Vegan Cheese, which becomes slightly more solid than its initial blended state.
4. Freeze the Vegan Cheese, which allows you to grate the frozen Vegan Cheese. PREFERRED METHOD
