1 egg - dry/no water Vegan Egg Substitute My preferred brand is Follow Your Heart, Vegan Egg
1 1/4 cup All Purpose Flour
1 tablespoon Baking Powder
1 teaspoon Salt
1/4 teaspoon Black Pepper - Ground
1 cup Water - Ice Cold
1 lb Vegan Chop House Seitan Cut into 2"x 2"x 3/4" pieces
1/2 cup Buffalo Sauce Franks "Red Hot Wings Buffalo Sauce" is my favorite off-the-shelf brand.
Condiments
1 cup Condiments Vegan Chop House Ranch Dressing
Carrots and Celery sticks

Place the seitan on a cloth and remove excess water. Allow the seitan to air while you mix the batter. Into a mixing bowl, place the dry egg substitute, ¾ cup of flour, 1 tablespoon baking powder, 1 teaspoon salt, ¼ teaspoon ground black pepper. Whisk the ingredients thoroughly.

Add 1 cup cold water and whisk until the mixture is a creamy batter. If the mixture is too thin add a tablespoon of flour at a time, and whisk until the batter is correct. If the mixture is too thick, add a teaspoon of cold water at a time, and whisk until the batter is correct. Place the seitan in a bowl and sprinkle ½ cup of flour over the seitan. Toss the seitan into the flour, giving a light covering to the seitan. Allow to stand for 5 minutes.

Make sure the Ranch Dressing has been left to fuse in the refrigerator for a minimum of one hour, before you plan on serving.

Place the seitan into the batter mixture. Mix gently by hand. Make sure the seitan is well covered.

Fill a saucepan up to halfway with vegetable oil. Place the saucepan on high heat. Heat to 350 F/ 176 C to 400 F/ 204 C. Gently place the seitan into the hot oil, one piece at a time. Do not overfill the pan. Give the seitan room to move. Deep fry for 5 minutes or until golden brown.

Gently remove the seitan to a paper lined colander. Allow to sit for 5 minutes.

Place the cooked seitan into a bowl and pour ½ cup of your favorite buffalo sauce onto the seitan. Gently stir or toss, making sure not to tear the batter from the seitan. Make sure the seitan is well covered with sauce.

Serve warm with celery and carrot sticks and your best Vegan Ranch Dressing.
