Soak the walnuts in water for 20 to 30 minutes. Heat the oven on bake to 400 F/ 204 C.

Cut/trim off the bottom edge of the Brussel sprout. Remove one set of outer leaves, and any remaining leaves that are loose. Cut the Brussel sprout in half, length ways. Place the Brussel sprouts in a large mixing bowl. Cut the cauliflower into small florets and add to the bowl. Add salt and ground black pepper to the bowl. Stir the cauliflower and sprouts so that the salt and pepper are evenly distributed. Add the panko to the bowl. Stir. Add olive oil and walnuts. Stir all the ingredients well, making sure that the oil is absorbed into the panko evenly.

Pour the ingredients evenly onto a baking pan, so that the ingredients will bake evenly. Place in the oven for 30 minutes.

Turn the oven to broil for 3 minutes if needed. Remove from the oven. Stir the ingredients, and allow to cool for 5 minutes. Serve warm.
