13 oz Coconut Milk 1 can. Regular not lite
1 tablespoon Garlic - Minced
1 tablespoon Thyme - Dried
1 1/2 teaspoons Salt
3 Green Onions - Diced Also called scallions or spring onions

Growing up I was lucky enough to be immersed in the influences of Jamaican cuisine. Jamaican rice and peas are a traditional accompaniment to most West Indian/Caribbean dishes. Flavored with the subtleties of coconut and thyme, this dish stands on its own merit. No accompaniment needed. Being vegan, and a lover of Jamaican food, I had to tell the world about one of my most favorite rice dishes from all cuisines. Here’s our vegan Jamaican rice and peas recipe.

Most Jamaicans call kidney beans – peas. Hence, you won’t find any actual garden variety green peas in a traditional Jamaican rice and peas dish. I like to use basmati rice for rice dishes. Basmati rice is the Rolls Royce of rice. There is no question that this dish is great on its own and good with just about everything else. Add the kidney bean liquid and the coconut milk to a measuring cup. Add water in addition, as needed to make up 3 ½ cups total liquid. Pour the liquid into a medium saucepan. Use a saucepan that has a tightly fitting lid. Place the saucepan onto a high heat.

Place 2 cups of basmati rice on a sieve and wash under a cold tap for 1 minute. Allow the rice to sit in the sieve while the liquid comes to a boil.

Finely cut the green onions/scallions into small pieces. Add them to the saucepan.

Once the liquid comes to a boil, remove the lid and add the rice, garlic, thyme, and salt. Stir well. Place a lid back onto the saucepan. Bring back to the boil. When the liquids are boiling, turn the heat down to the lowest setting. Let the contents cook for 15 minutes. All liquid should be absorbed. Turn the heat off and leave the pan with the lid on for 5 to 10 minutes.

Remove the lid and stir the rice, making sure to get down into the bottom of the pan. Do not replace the lid, and let sit for 5 minutes. Serve warm and enjoy.
